Heirloom Lettuces with Avocado Vinaigrette
Recipe from Earthbound Organic Farms… Serves 4 to 6
Serve this salad on a large, flat platter to show off the pretty colors and shapes of the heirloom lettuce leaves. Luscious wedges of avocado alternate with cherry tomatoes for an attractive presentation. Avocado oil is buttery and rich, and it’s good for you, too. Keep vinaigrettes simple so the oil isn’t overwhelmed.
1-1/2 tablespoons white wine or champagne vinegar
4-1/2 tablespoons avocado oil
1/4 teaspoon dried tarragon
1/4 teaspoon salt, or to taste
Freshly ground black pepper, to taste
7 ounces Heirloom Lettuce Leaves
1 cup halved cherry tomatoes
1 or 2 ripe avocados, preferably Hass,
peeled, pitted and cut into thin slices
To make the vinaigrette, place the vinegar, oil, tarragon, salt, and pepper in a small glass jar and seal tightly. Shake vigorously to combine. Taste and adjust seasoning as desired. Set aside at room temperature.
Place the lettuce leaves in a large salad bowl and toss with two-thirds of the dressing. Transfer the greens to a large platter and arrange decoratively. Scatter the tomatoes over the salad, and then arrange the avocado slices. Drizzle more of the dressing over the salad and serve immediately.
